The work starts before we open.

Every morning our baristas pull a shot, taste it and adjust. Yesterday's grinder setting is not automatically today's.

Milk chocolate. Caramel. Smooth, rich and balanced.

We found it in a latte at Analog Coffee in Calgary. It was so smooth we had to know what was behind it, so we traced it to Fratello Coffee Roasters and visited the roastery ourselves. One espresso, dialled every morning, is how we keep it consistent.

The blendGodfather Espresso Classic, a medium roast from four origins: Guatemala Montecristo, Colombian Bolivar, Nicaraguan Los Placeres and Peru Organic COEX.

Why our coffee tastes different

It started with macarons. We kept baking.

In March 2020, our usual work had stopped, so we tried something difficult instead. The first macaron shells did not come out right for a long time. We kept testing anyway and started sharing them on Instagram and Facebook.

That kitchen became 82 Bakeshop in Saskatoon, then a small takeout shop in Regina. In 2025, we opened up the rest of our space. We already had the desserts. We found the coffee in Calgary, after a latte at Analog Coffee stopped us in our tracks, and built the café we had imagined all along.

Today, our signature desserts are still made in that same kitchen, in more flavours than you can try in one visit.
